So we have both ~てください and ~てくださいませんか for making a request, but according to this lesson only ~ないでください for a negative request.
Does that mean using ~ないでくださいまんせんか is not a thing at all?

~ないでくださいませんか is technically possible, but its extremely unnatural and essentially never used. So yeah.
Could someone explain to me why なくて isn't used here instead its ないで ?
I believe whats going on here is that its using the て form of the copula で but I don't really understand why... is it because ください can only take a noun or the て form of a verb and ない is actually an adjective? Where the copula can still be used as a verb because its essentially a contraction of である ? Would なくてください express anything at all or is it entirely meaningless?

ないで and なくて have different roles in Japanese. ないで forms the fixed request pattern Vないでください meaning "Please dont do V."
On the other side, なくて is the て-form of the adjective ない and is used to connect ideas.
Because ください only works with the fixed Vないで request construction, Vなくてください is not grammatical in standard Japanese and does not mean a meaningful request.
In short, use ないで for negative requests and なくて for connecting clauses.
