what really separates all of the gendered terms? [i get all the top ones are somewhat 'male' and ditto for 'female', but is there any grammar/social things of note?]

男性 male person

 male animal

メール mail

女性 female person

 female animal

うみな alternate pronunciation of おみな “old woman” probably an archaic pronunciation of おんな

Pretty much what @ポールおじちゃん said. The dictionary might have メール (male), but I practically never hear it used... like at all. I feel like a lot of native speakers won't understand うみな without enough context. Katakana for オス / メス is fairly common. You'd (almost) never use オス / メス for people.

Fun fact, botanists use them for flowers: 雄花 (male flower), 雌花 (female flower).
