I recently started using renshuu and so far I love it! However, while doing grammar lessons I got to the one about basic verb conjugation, and while the lesson was helpful I find the quizzing to be frustrating because I don’t know any of the verbs being used… It feels more like a quiz on words I haven’t learned than a grammar review since I’m not familiar with the unconjugated dictionary forms or whether the verbs are ichidan or godan.
Is there a way I can pause that term/concept from being used in review while still being able to review the other grammar lessons? Or, is there a list of common verbs I could add to my schedule? I would like to keep my current mastery of the other concepts while I start learning more verbs.
Please also let me know if I’m doing something wrong or have missed something that would help me understand the review questions better.

Sadly..there is no way do to something like that
, happened to me when I was new to renshuu too. I started my grammar N5 and the quiz just hit me like a truck. I was so angry because I didn't knew the words at all, felt like giving up and I didn't even paid attention to all those sentences.
But on the other side, it has a advantage because since you do not know these words you would then go to the dictionary to search it and know it's meaning, which then makes you remember it easier when you will start " Japanese words N5 " schedule.
Even if you don't know all the words, you start to guess meaning from context, grammar pattern, and sentence structure
You'll see the same words and structures pop up again and again, even if you don't learn them the first time, repeated exposure to these words will make it easier .

You might want to try adding a verb conjugation schedule to get quizzed on verbs you know.
The rhymes with iru/eru is probably ichidan "rule" should work for most verbs (excluding the rare exceptions, which are usually memorized by being exposed to them)
However, to make those questions go away:
From the dashboard -> Click on Schedule -> Click on the number at the top left beside (expressions/words/kanji) (to the left of the bar chart) -> click on the eyeball for the (expressions/words/kanji) you want to go away
That will prevent the (expression/word/kanji) from appearing in your quizzes (press the eyeball again to reactive it)
There is a way to remove sentence with words we don't know ? Or did I read the question wrong?
You can remove terms i.e. expressions/words/kanji, from a schedule as I described. (I believe this is what was asked for)
You can also block individual sentences from appearing in quizzes (including grammar quizzes) by clicking on the eyeball beside the sentence (on the screen after you answer the question in the quiz).
Note: Hiding things has a global effect. So once you hide them they won't appear in any quiz after you do it.

The intended use of the default schedules is that the Words schedule will teach you all of the vocabulary you need to understand the questions in the matching Grammar schedule. If you're encountering words you don't recognize in the grammar questions, that means you've skipped too far ahead with grammar and you need to catch up with the vocabulary. You can check how many words you have left to learn before you're caught up by clicking on the title of your Words schedule and looking at the stats for how many are still unlearned.
To answer your main question of removing things from review in the meantime, click the eyeball button next to the grammar points that are serving you questions that are too advanced. Then when you've caught up, you can click the title of your Grammar schedule, click the link in your stats for "Hidden" terms, and re-enable them there.
