The only ones with simple words are going to be the ones directed at preschoolers.

I usually watch old Disney classics that I’m very familiar with and any slice of life anime is good they are usually using more conversational Japanese.

Bluey on Disney has a great Japanese Dub. The subtitles use common Kanji and it's overall a great comprehensive source. Like the other one said old Disney movies also have great dubs as well.

Saying this as we're watching Bluey in the house lol

I second "Shirokuma Cafe". It covers many topics and scenarios, plus lots of repetition and clear language. It feels like watching educational media without the oversimplification of preschool shows. It also just has great vibes.

I also suggest finding a movie you love and just playing it over and over. It doesn't have to be simple, just something you don't get tired listening to. I do this with "Howl's Moving Castle" and understand big chunks now.
