I came across a sentence along the lines of "subtract 4 from 5, then.." which used　減じる. But if 減ずる is subtract too, is there a difference between these words?

Are there other ways to describe subtracting number apart from this, and 引く ?

じる is the modern form of ずる, so the latter would be used for a formal or dated feel.
